Tasting notes
Nose: Rich, fragrant vanilla first, sweet and almost floral, then warm toffee and a soft hint of dried fruit.
Palate: Sweet vanilla and caramel, with toasted oak and gentle spice. Raisin and fig from the sherry cask.
Finish: Long and warming. The sweetness fades slowly into polished oak, with fragrant vanilla still lingering at the very end.
The story
Five years ago, we filled three casks with our rum, two ex-bourbon and one ex-sherry, and set them apart from everything else in the distillery. While the rest of our rum came and went, these three were left alone in a quiet corner, untouched and waiting. That’s why we call them The Lost Casks.
We tasted them as the years passed, and this year we knew they were ready. Standing in the distillery passing the glass back and forth, we were amazed: deep, sweet and beautifully fragrant, with a vanilla richness that stopped us both in our tracks.
Two of the casks had once held bourbon, and their American oak had given the rum that rich vanilla and real depth. The third had held sherry, and it added sweetness and fruit. Together, they made the oldest and most complex rum we have ever made.
We blended the three casks into one small batch and bottled it at 52% ABV. There was only enough for 30 bottles. We’re keeping a few for ourselves, and the other 25 are here.
The details
Every bottle is numbered by hand and comes gift boxed, with a handwritten note from Russ and Gemma. This is a single release, and there won’t be another. When these 25 bottles are gone, The Lost Casks will be gone with them.
Pour it neat. Add a drop of water if you like, to open up the vanilla, then take your time over it. This rum waited five years; it’s worth a slow glass.
