Winter Citrus Spiced Rum
Chocolate orange, all grown up. A small batch made by hand for winter.
Tasting notes
Nose: Warm dried orange peel and dark cacao, with soft winter spice.
Palate: Chocolate orange, rich and rounded but never sweet or sickly. Bright citrus over cacao, warmed through with spice.
Finish: Long and warming, with dried orange lingering over gentle spice.
The story
We wanted to bottle the flavour of a chocolate orange, the one that turns up every Christmas, without the sugar rush. Rich and festive, but not sweet or sickly.
So Gemma dried the oranges herself, slowly, by hand, over three days. We steeped them in our rum for four days with cacao and warming spices, until the orange and chocolate came together in the glass.
The dried oranges turned out to be thirstier than we expected and soaked up more of the rum than we planned. This batch made 119 bottles.
The details
Pour it neat, or over ice by the fire. Stir a measure into a hot chocolate, or top it with ginger ale and a twist of orange peel.
